Welcome to My Restaurant.

After twenty plus years of owning restaurants in Tasmania starting with “Quigley’s Balfour Terrace” in the eighties, “Schouten House” through all the ninety’s, “Fidler’s Brasserie” and then “Fidler’s on the Bay” at St Helens in the naughties, I have returned to Launceston to open the “Brisbane Street Bistro".

This bistro reflects thirty-odd years of cooking lighter, more simply prepared dishes in a relaxed atmosphere. 

In just five years, we have attained awards for “Best Informal Dining”, “Best European Restaurant 2011”, and “Best European Restaurant 2012”, “Best European Restaurant 2013”, "Best Stand-Alone Restaurant 2015 and “Best Front of House 2012”   from the Tasmanian Hospitality Association.

Our hand selected wine list reflects our provincial nature with strong ties to the Tasmanian growing regions of the Tamar Valley & Coal River. The complete list draws from every major wine growing region in the country, and selected regions of France and every bottle listed has a dish that complements it perfectly.

An Experience to Remember.
Christmas, 2017.

For the second time in 10 years, I'll be hosting Christmas in my restaurant for 45 lucky people.
The menu is a classic combination of my favourite summertime and Christmas dishes, and I want to share them with you. My five-course Christmas degustation invites you to experience the breadth of his culinary creativity in a perfect balance, no further thought required. Each course can of course, be matched with wine.
